I was shocked to learn about all of the recent science from chemical coatings on our cookware ending up in our bodies. I recently did some more research and got rid of all of my old cookware and changed to a ceramic non toxic safe version. My friend David from Chef’s Foundry showed me a set of pans and utensils that were not only easy to cook with, but certified non toxic! Take a look at the science, and the set and see what you think….

This year, VegFest exploded into the largest ever! It was held at the 1st Bank Center in Broomfield CO and attracted thousands of people!

Raw Chocolate Cream Pie
Having a sweet treat for the holidays or a birthday celebration is something I cherish, but I don’t want it to be at the expense of good health. So I’ve recreated one of my favorite childhood pies – chocolate silk cream – into one that actually promotes a healthy lifestyle. This pie is made with real, whole foods (all raw!) and is completely plant-based (vegan). It is also gluten and sugar-free, so it really is a true “treat. And most importantly, it is rich, creamy, chocolaty, and wonderfully decadent. I hope you enjoy this chocolate pie as much as I do, and here’s to your great health!

VegFest Colorado 2016!
Wow! VegFest Colorado (http://www.vegfestcolorado.org) was nothing short of fantastic this year! Besides all the wonderful vendors, foods, clothing and knowledge to be gained, there was an unbelievable desire for people to really learn and grow from all the information available.

Cholesterol Guidelines
As many of you may know, the US Dietary Guidelines for Adults is under revision. One of the major points of controversy is the potential lifting of cholesterol limits. Now, we’ve known for a while that the arbitrary 300 mg of cholesterol per day ceiling that was set was probably a “best” guess. But, we also know that there is a direct influence of dietary cholesterol (i.e. from animal products) on our serum (blood measured) cholesterol. As such, eating all the eggs and butter you would want will indeed raise your serum cholesterol, in addition to creating some serious inflammation, and in susceptible people, make blood sugar (or diabetes) worse and raise one’s risk for several cancers, heart attack, and stroke. As such, it is my hope that we don’t lift this guideline just yet until we have a better handle on the magnitude of this problem. As you could imagine, many big food industries would jump on the ability to create rich decadent foods loaded with cholesterol if this limit is lifted. Know that many of your cardiologist professional organizations are working hard to prevent the potential public health crises that could ensue!
Mmmm. Chile con Queso
I didn’t think it would be possible. A local company here in Colorado has come up with spicy “queso” without the dairy! It’s sensational. I am not being paid to say this either… Let Thy Food has come out with a new product that is so close to the real thing that I cannot imagine my chips or burritos without it! Stop by Nooch or Whole Foods here in Denver to grab some!
